Lavender: Vaucluse, and mostly the plateau of Sault, is the French main producer of lavender. The lavender essential oil is used in perfumery, pharmacy and aromatherapy. The flowers, once detached from the stem, are put into little fabric bags or used as infusion.

Nougat and macaroon of Sault: made with lavender honey and almonds produced locally.

Einkorn: ancient cereal cultivated on the plateau of Sault.

Lamb of the Sault Country: fed with his mother's own milk as needed by tradition, it has a very fine texture and incomparable natural taste.

The "Côtes du Ventoux" vineyards: Grenache, Clairette… over 100 cellars keep with tradition to produce a wide range of famous red, rosé or white wines.

Goat cheese.

Truffles: markets in Carpentras and Richerenches from November to March.

Aromatic herbs: thyme, rosemary, savory, chive, laurel… grow naturally in the hills.
